Diary of a Garden – Episode #2
Yield! Bounty! Harvest! My garden has proffered 8 radishes so far!
This is the first of the season’s offerings. Having such little experience gardening veggies, I can’t hardly believe that just 1 month ago I was putting these seeds in the soil. I ate one fresh out of the ground – I couldn’t wait to wash all the dirt off – it tasted fantastic!
The rest of them I decided to use as a garnish for tonight’s dinner – Mexican Lettuce Wrap ‘Tacos’. I used this recipe for inspiration, but instead of marinating chickpeas, I steamed some chunks of tempeh in the marinade for about 20 minutes. Great flavor and the veggie garnishes offered lots of crunch and freshness. Radishes are a perfect addition to tacos. (Thanks to my brother for the tip).
